Kasia, my gorgeous sister in law to be, had a dinner party last night in Dublin. She's a brilliant cook and produced loads of divine looking and by all accounts incredibly tasty Polish food. She made a Beetroot soup along with countless other things. I'm booking my seat at the next food feast!

These Beetroot pancakes were inspired by you Kasia!

Recipe.
Cup flour
Two eggs
Cup milk
Tablespoon coconut oil
Salt
Beetroot. Half a steamed & mashed medium sized (tennis ball) Beetroot.

Next time I'd add baking soda and maybe less egg. It's hard to tell what effect the Beetroot had. I'll make up the plain version pancakes tomorrow morning and be able to adjust this recipe better then.

The colour is brilliant on the plate. Id love to serve mini ones with creme fraiche and smoked salmon. Caviar too perhaps ! Or even cucumber instead of the smoked salmon.
