Chilli con no carne
Found red kidney beans yesterday and made a great big chilli today. So it didn't marvel Margots meat chilli or Louises veggie chilli (which I believe has smoked paprika yum!) but it was happily eaten and will be again for a few more nights.
It had onions, carrots and Yucca all sautéed with scotch bonnet hot chilli peppers for the heat. Added only one yellow one without the pith (thats the hottest part even though people say its the seeds) or seeds. It was the size of a giant grape and thats enough for what will be six portions.
Yucca was nice for additional texture.
