A vegetarian dish. It went by quickly and thought the topping was salmon. Actually chopped tomatoes and the rice was stuffed with a philadelphia style cream cheese. Not fish but still really tasty. Oops to the no lactose :) Hokkaido is known for its dairy too. Only place in Japan.

Nigiri Mame fugu Deep fried blowfish with what they called special sauce :) The only warm dish. Delicious Tasted slightly like whitebait in a light tempura and the sauce was a Silky smooth soy sauce although not as salty as a rich soy.

Gunkan maki Negi toro Chopped fatty tuna and scallions Expected larger slices of the fish rather than paste. Flavour was very light sort of tinned tuna taste and not very pleasant but very interesting. Love the wasabi here. It's lighter and the ginger is more perfumed. The seaweed is crisper and unbelievable fresh.

Gunkan maki Tsuna sarada Tuna salad. Like coleslaw. But really fresh crunchy mild flavoured. Tasty. There is a big ball of delicious rice in all of the dishes under the fish too. As always the sushi rice is amazing. Sticky. Slightly Sweeter and more flavour than other rice. Less fluffy. Sometimes even salty but not here.
