Here is the recipe for your Japanese night's meal :-)
In place of Sake or Mirin (which is rice wine and sweet rice wine) I would think semi-sweet white wine would do the trick?
Serves 2 Rotam are one; who eat like two :-)
- 2chicken thighs
- 1onion
- 3eggs
- 4tablespoons chicken stock
- 2tablespoons sake (Dry white wine?)
- 2tablespoons sugar
- 2tablespoons Mirin (sweet cooking sake~semi sweet white wine?)
- 5tablespoons soy sauce
- 2cups cooked rice
- Cut the chicken thighs into bite-size pieces.
- Peel the onion and slice it thinly.
- Beat the 3 eggs in a bowl.
- Combine chicken stock, sake, sugar, Mirin and soy sauce into a small pan and bring to the boil.
- Add the chicken pieces and the onion slices and simmer until chicken pieces are cooked (about 5-7 minutes).
- Add the egg mixture to the pan, cover and simmer for abut 40 seconds, till the eggs are cooked but still soft.
- Serve hot on warmed rice (if in Japan this would be short grain-aka sticky rice). And before you eat you say "itadakimas" which sounds like one is saying "Eat a duck I must", but actually giving thanks to the animals and plants that have given their lives for your meal :-) How honouring.
