Breakfast.
Aubergine omelette.
Never had this before. Will cook it again
Take full aubergine. Scorch skin. Peel. Leave a bit of the burnt skin on for flavour. Leave top of veg on too. Flatten it out with spoon.
Place in lemongrass chilli ginger onion egg (whisked) (1.5 per aubergine) perhaps sauté the spices. Need to try both ways.
There is no overpowering spice. The egg and the vegetable makes a omelette like texture.
Deep fry both sides. Enjoy. You will.
