Lunch on the boat
An amazing lip smackingly good cerviche. It was a light tasting vinegar that was slightly sweet too. The fresh fish shone.
Coconut vinegar. This is like a white wine vinegar just softer milder taste. Not as astringent.
The dish also has calamasi juice. This helps add depth. A lemon would overpower. Maybe mix mandarin and lime juice. Peppers, red onion.
Really fresh.
