It's been a day of talking today, we had a meeting with Prakash our partner this morning which covered; pacing out the boundary of the restaurant (large), suppliers, running a postal service, chess, chefs and napkins.
We should have the first work - a raised seating platform - finished in four days and the restaurant "tent" and floor in ten days. So we should be open for full business in two weeks, and starting a breakfast and lunch service as soon as the first seating area is finished. Prakash is seeing a chef tomorrow, a trainee that we can mould as we please and if he's okay we can then start teaching him how we want it done. For the high season we'll also have an experienced chef to run the kitchen. We're getting ideas for a menu together, it's going to be quite healthy organicy to fit in with the yoga clients. Mahesh the yoga teacher has been very helpful in suggesting some dishes; avocado on toast, a proper fruit salad, quiche etc. Anyone got any healthy type dishes that would fit the yoga bill? The evening menu will be a bit more varied, we've got a tandoori oven for Indian dishes and Prakash is keen to offer Chinese and continental as well. Don't know at the moment if we'll go that diverse - lots of places do a mediocre Chinese, I'd hate Cafe Utopia to be another one.
We had a meal with Prakash and his girlfriend Lena, the first goodluck meal as Prakash termed it. Lena had been cooking all morning while Prakash was building the reception building for his cottages. Lena had made rice, daal sauce and curried sardines. With some abundantly flavourful tomatoes and chilli chutney it went down a treat as home cooking always does. We might have to get her cheffing in the restaurant.
Tomorrow we're getting paint to go over the fish, DJ and bikini lady currently decorating the bar. The current murals were Lena's work and we may have hurt her feelings with our keenness for magnolia but it really is terrible at the moment. In a few days we'll be off to Mumbai on the train as we'll be able to get tent material, kitchen equipment and cutlery etc much cheaper. We're going on the train, probably in a day and carrying an entire restaurant's worth of goods. Should be nice and relaxing.
We've got accommodation at the Utopia in a bamboo cottage until the Reception is complete, then Prakash can move the stuff he's storing and we can have a room in the house, Matt will be able to keep this for the rest of the season. What we haven't got at the moment is a shower, all the water is off at the moment in the resort, Apart from that it's all looking peachy.
