Larb or laab chicken salad

V traditional food

Minced meat with mint and scallions served with sticky rice. Straight away we both missed the chilli paste and sauces from the hike.
This dish is often served like a cerviche and raw or marinated. This one was wok cooked.

It was light and refreshing but would have like lettuce with it :) good to try this dish anyway as think it's one of the national dishes.

Ate it on a veranda overlooking Mekong in the super chilled out island. Snooze time. Goodness we are lucky. !
