Devilled eggs.
The hard boiled yokes are taken out and mixed with mayo and a crab caviar.
The cavier didn't have much taste but the eggs were light and mayonnaisy heaven.
They came with a frisée and radish salad with a french shallot vinegrette. I love emulsified salad dressings. Maybe because it feels like someone has gone the extra mile!
