Woke again after a restless sleep at 7.30am and headed down for a quick breakfast of muesli in the guesthouse at 8.00 before being picked up at 8.30 by a driver for The Smart Cook Cookery School. Getting on board the truck , I met one of the 2 other girls, Christine from Western Australia, who was going to be doing the day's course with me. The driver then took us to the local market, where we met Yuii, our teacher for the day, who for the next 1/2 hour showed and explained to us the different vegetables and types of rice used. After this, we hopped on board the truck once again, where we met the final girl Maya, from Israel who was to be doing the course. We then proceeded to the train station, where Yuii bought our tickets, 3 baht for us, and free for her, for the 20 minute train ride to Pa Sao. During this quick journey we got to know each other, including Wally, Christine's toy kangaroo who likes to have his photo taken around the world. (He made a number of appearances throughout the day).6 From there we made our way over the railway tracks to a barn awning 5 minutes away where we picked up our bikes and made our way 15 minutes ride through peaceful farmland to the farm where the cookery school was located. From the 24 recipes we each chose 6, which also included a curry paste. I chose fried rice with chicken, chicken in coconut milk soup, spring rolls, deep fried bananas and massaman curry paste and curry. We each made 2 recipes at a time, and then sat down to eat them, with a break of an hour before the last 2 recipes. During this hour we were shown round the small organic farm which was self sufficient, and all the many plants and spices they grew. At 3 o'clock we took our bikes back to the station, but this time met the truck which took us the 30 minute journey back to our respective hotels / guesthouses. After a shower and change, took myself out for dinner within ChiangMai before heading to a local bar for a quick drink before heading back to the guesthouse for the night.
