SO here are the recipes for this first port: Fried Plantains & Pasta w/ Alfredo Sauce & Veggies! This is what they had that was vegetarian so that's what i ended up having. but the specialty of this area is Conch (pronounced conk) which they prepare in several ways.
Fried Plantains:
INGREDIENTS:
- 1 ripe plantain per person
- Olive oil
METHOD / DIRECTIONS:
The plantain peel should be all black, meaning that it is very ripe. Peel the plantain and cut into one-inch thick slices.
Heat the oil and fry the plantain slices until golden brown. Drain.
Pasta Alfredo w/ Veggies:
Ingredients:
- 1/2 Cup Butter or Margarine
- 1 cup whipping cream
- 1/8 teaspoon ground nutmeg
- 1 cup shredded Parmesan cheese
- 1 (19 ounce) package of cooked linguini pasta
- 1/2 cup of frozen veggies (carrots, cauliflower, brocolli, etc)
- Habenero pepper to add flavor.
In a saucepan, melt butter over medium-low heat. Add cream and nutmeg; heat through but do not boil. Stir in Parmesan cheese until melted and add frozen veggies and let cook until tender. Cook pasta according to package directions; drain. Transfer to a large serving bowl. Add the cheese sauce and toss to coat. Serve immediately. Add habenero on top to taste.
Our waitress was mad i was "ruining" the dish with hot sauce so she brought me chopped up habenero which was exactly what i needed! :)
Over all it was somewhat difficult to be a vegetarian in Nassau (one night for dinner i had a baked potato with nothing on it and a side of plantains)....but absolutely loved the town and people!
