So today we travelled to Epernary which is the capital of the Champagne district. Only champagne comes from here, if it's called champagne then it legally had to come from this area. We toured two wineries. Moet and Mercier. Moet is one of the oldest and most expensive and elite brands of France. They have bottles dating back to 1700s and levels and levels of cellars. But Mercier had a really neat train ride that took you through their cellars and that was a lot of fun! Like a little theme park ride!
It was interesting learning about new things since I know almost nothing about champagne. I grabbed some information booklets to keep track of all the details! I never thought about how they remove the sediment left over from the yeast and sugar, so the wine is clear, but they store the bottles tilted downwards so the sediment will settle into the neck of the bottle... then they open it and the fizzy that bursts out gets rid of the yucky stuff before they cork it and leave it to sit for a wide variety of time.
After we got back, I headed out to Sacre Coeur and had A BLAST. We got crepes and just sat and enjoyed the scene. The waiter was very funny and spoke very good english, he had a blast with us and we thought he was great! On the way back to the metro we saw fire breathers and preformers, they were really neat.
Well I'm super, super tired and heading to bed! Tomorrow I'm traveling to Lyon!
