Leftover special ! Used some of the curry lentils from last night, mixed in the pea and tomato salad from yesterday and steamed some rice with curry and scotch bonnet peppers. Then I used this filling for some corn empanadas. I didn't quite have enough Maiz flour so added normal white flour. It was okay but the pure Maiz works better. Peach porridge delight.

Scrambled eggs and tomato on toast and a pea oregano and tomato salad. The peas were tinned and not the fresh kind. Tricky here to get anything fresh that isn't ridiculously expensive. (tried to get a pineapple today and it was €10). But these peas are like a guilty pleasure for me. Don't get me wrong I adore fresh garden peas bursting with spring. But these kind remind me of holidays in France as a child and also when I lived in Spain.

Dry pan cooked cheese and tomato toastie. Cheese failed to melt so there was a bit of microwave action required. Just using the last of that awful cheese we bought a few weeks ago. I guess one good thing about it is it doesn't seem to ever go off ! Still nice with the oregano tomato and mayonnaise. I had delicious porridge and peach jam. All washed down with our spoils from the thunderstorm - we've been collecting rain water during the night and this morning...

Defrosted the chilli and corn vegetable burgers from the other day. Still all really tasty. Corn burgers even freeze better than the potato ones.
