Top Food
We need a special mention here for Masala Chai. Sweet, strong, milky tea spiced with cardamom, cloves, cinnamon, pepper and star anise, served in a glass similar to that of liqueur: it lifts you up when you're down, warms you up when you're cold, and wakes you up when you're fuzzy- this is the ultimate little upper. There is nothing like it, and we will love it forever!
1.Paneer Tikka (unfermented grilled cheese)
2.Paneer Mukhani (unfermented cheese in tomato gravy)
3.Malai Kofta (potato / cheese balls in tomato gravy)
4.Dosa (HUGE lentil pancake with various fillings)
5.Bundi Milkshake (like Ultramel with nuts!)
6.Thali (platter with various curries, pickles, lentil soup and rice)
7.Rasgulla (Super sweet paneer balls with rosewater & saffron)
8.Aloo Ghobi (potato & cauliflower curry)

Things to Avoid:
We ate everything we could get our hands on (only vegetarian though!) and didn't get sick once. So whatever rumours you've heard about India's food is necessarily true.
We would recommend avoiding non-air conditioned busses in the middle of summer, try not to get involved in a cow-hitting accident, and make sure that you get the glycerol out of your beer.
Other than that, there is not much you can control in India. Just go with it and see what happens!
