School is slowly getting better. I am starting to understand the language a little more. It's too bad that I won't be able to study the language much after the trip. You can tell that everyone is getting more tired as we go on. That is why Jeremy and I decided to go back to he flat and relax. I took an awesome long nap. I was totally refreshed for our cooking class. We went to the apartment of one of the teachers - Carla and Carmen. They were so kind and happy to be with us. I felt welcome from when we first stepped in the door. We stuffed ourselves into the kitchen to start cooking the meal. Carla didn't speak much English so Max was our interpreter. We started making grilled vegetables. First the eggplant and zucchini needed to be sliced. We all helped with that. Jeremy tried showing his chef skills. These veggies were put into a pan without oil (that is the grilling part). When ready they are put into a dish with lots of olive oil and other flavorings. My favorite was the zucchini with balsamic vinegar and mint. We were told that these veggies are actually better the next day, and very good with sandwiches. It am definitely making it at home for sandwiches. Next we started working on the pasta course - pasta with speck ham and zucchini. More zucchini! Yum! Speck ham is like bacon. This course was my favorite part of the meal. It was so fresh. All we really had to do was cut up the zucchini and ham. While we were preparing that, we started the vegetable course - vegetables au gratin. I originally thought au gratin meant with cheese, but really it means with bread. We sliced up tomatoes, onions, and potatoes. Put them on a sheet and put bread crumbs et al on top. So simple yet so yummy. We finished up by making the meat course - Saltimboca all Romano. Roughly translated to Jump in my mouth! :-) We all laughed at that. This was beef browned with flour. Then we put prosciutto and sage on each piece and sprayed with white wine. It was so good. everything was so good. It was fun to watch Max get so excited because he know what this all should taste like. Once all this was prepared we walked up to the terrace. There are no words to describe the amazing feeling that I felt when seeing this view. We were overlooking the citta (city) from on top of a beautiful garden terrace. The table was set beautifully under a canopy. I almost had tears in my eyes. We were able to walk around and take lots of pictures before we sat down to eat. We also started the dessert on the terrace - coppe di ricotta. Finally we sat down to eat. And did we eat! With the grilled vegetables we had a light sparkling white wine. Salute! We couldn't believe what we were eating. Everything we put in our mouths was just fantastic. We had a nice red wine with the pasta and meat (several glasses). Everyone was in a nice happy state by the time we go to dessert. With the ricotta we had a small glass of limoncello. Thankfully Nass has warned me about it. Many of the others took it as a shot. It is very strong. I didn't think it was too bad, but I did sip it. And so ended our amazing evening of a typical Roman meal. I am so excited to try these meals at home. I am also so excited that we get to do this again! The next menu sounds amazing!
