Olinda is an exquisite small colonial town with cobbled streets, brightly coloured houses and plenty of churches. Last night we ate at some food stalls that overlook the town and the city of Recife, Olinda´s big sister. The funny thing was that every single stall sold the same thing - Topiacas. Which is a typical snack made from a local vegetable called Manioc and is filled with either a savoury or sweet filling, however they seem to be a bit confused as they offer cheese, cocunut and condensed milk as one filling - not so sure about that one!
Olinda is argueably the main town for Carnival and many shops you see the giant effigies on display that are carried through the streets during Carnival.
Tonight we head for Salvador - a 13 hour jounrey. Then heading to Chapada Diamantina National Park which is a further 6 hours inland for some trekking, waterfalls and wildlife.
