Cooking Classes
After having arrived in a city, we always have a little stroll in the neighbourhood and see what's what and get a feel for the place. It was while we were wondering the maze like back streets of our old city neighbourhood that we stumbled across a place to do some cooking classes.
"This could be fun. Let's have a little lookie-see".
The class, a little later that afternoon, had eight of us watching our mistress and assistant cook up the most fantastic dishes. Certainly the best we have had in India so far! While she cooked and some of us helped, Ing and I scribbled away furiously capturing all the culinary wisdom we could from this expert.
She made it all look so easy. Like any professional she made it look so easy! And assured us that it was all easy! Even her artist husband, who popped in now and again, said that it was easy! In the space of an hour and a half, she show us how to make our own garam masala (seven roasted and ground spices) and masala(masala means seven spices), butter masala (which we had with paneer, but could be a base source for practically anything), sweet dal (soaked lentils and spices and another base for all sorts of other things), aloo gobi(potatoes with cauliflower) and stuffed chapatis! Her batch of masala chai was just the thing while we watched, assisted and wallowed in the aromas that filled her kitchen!
After one dish was prepared, we had a little taste and the remainder was put aside. It was with great anticipation and with enormous pleasure that the eight of us all sat down and enjoyed the dishes that had been prepared before us! I know that we left nothing behind, it was so good!
If you get a chance to go to an Indian cooking class, just go. I am sure that you will not be disappointed! With our notes in hand and tummies full we already imagining ways to use these new recipes when we got home. What about a European run Indian resto somewhere in the world? After all, we just had classes!
