We arrived in David at about 9am & asked around until we found the bus to take us to Boquete. About an hour later we checked into the Nomra Hostel & nipped into town to see what it had to offer & grab a (good) coffee & bite to eat. 2 hours later & we were off on a tour to visit Mr Tito's coffee plantation. We had a great guide & Mr Tito was a really sweet guy who'd built pretty much all the coffee processing machinery himself! It turns out that the coffee beans that grow on the trees actually have 2 beans in each one. These need to have the initial layer of skin removed, be cleaned of the sticky coating, then have the first coating of the individual bean removed, then the second coat, before being roasted. And the different type of coffee is determined by how long you roast the bean for. American/mild is approx 12mins (which has the most caffeine), French/medium roast is about 13mins, & Italian/strong roast (which actually has the least caffeine in it!) is about 14mins. This went against everything that I thought about coffee, but helped me understand why my favourite coffee (strong/Italian), didn't keep me awake! (Obviously an espresso just uses more coffee to make a smaller cup). Unfortunately it was pouring it down while we were there, so we didn't get to walk around the 5 hectares or see the greenhouse, but the 5 cups of coffee were a great substitute. Afterward, I grabbed a quick snooze before dinner up the road & an early night.
