We sliced the lemongrass lengthwise several times and then worked a paste of chicken and herbs into the grass to 'stuff' it. I must admit at the start, I had no conception of how we were going to stuff a lemongrass! (Not sure whether the result was worth the effort...it was a bit bland, but perhaps with tweaking it could improve)
