Tamarind and fermenting fish sauce
The tamarind in the foreground is 2 colours because one is aged, the other is fresh. The fish sauce had chunks of fish floating in it and, like other SE Asian cuisines, is essential to Lao cooking - though this particular version can be potentially harmful to Western tummies.
