Breakfast at Dr Holms was magnificent and included 3 different kinds of goat's cheese. Gjetost is the best-known and is also referred to as Brunost. It's produced by heating a vat of whey, cream and milk. The caramel brown colour is the result of the caramelization of milk sugar in the heating process. In Jan. 2013 a road accident involving 27 tons of goat's cheese caused a fire which shut down a tunnel for 6 days!
