Catching a local bus we arrived in Belize City and caught a water taxi out to Caye Caulker, a small laid back island surrounded by coral reefs. Our hotel was right by the sea and you could walk across the island in 2 minutes flat!
We spent our first evening sitting on the pier with the group drinking coconut rum, watching pelicans feasting on fish guts as local fishermen cleaned their catch and enjoying the sunset. Bliss!
The following day we all headed out on a boat to do some snorkelling. Stopping at 3 different areas we saw loads of turtles (including a baby), sharks (some up to 3 meters long), giant stingrays, amazing coral and huge fish (including Barracuda, Grouper, Parrot Fish and a giant Green Moray Eel). Belize has some of the best snorkelling we have ever encountered, easily rivalling the Great Barrier Reef and the Red Sea. We even got to stroke a huge stingray although we desperately avoided going near its tail after what happened to poor old Steve Irwin!
That evening we had a BBQ on the beach, polished off the remaining rum and watched Ross dance on the table!
