Summer meal with friends.
Great tomatoes are always a perfect way to start a meal. Add basil and mozzarella and it's a party. I'm still trying not to eat cheese but I was informed it was the melt in your mouth kind!
The wild rice had a pesto mix through it. A really clever way to add a bit extra to the rice.
This was served with what must be one of my favourite types of salads. Chickpea and avocado. It also has egg yolks (hardboiled and turned into fine crumbs) and a delightfully fresh and zingy dijon vinegar dressing !
The fillet kebabs were perfectly tender and had a great mild Moroccan smoky flavour.
