This exact day last year I simultaneously graduated from Univeristy and celebrated my 21st brithday - it was one special day in my life that I will never forget; all my friends and family were with me congratulating me on achieving the two greatest milestones of my life (so far; at that point). And now, just one year on, I am on the other side of the World. I have seen and experienced so much already that I can barely believe there is more to come!

I woke on my 22nd birthday to lots of multi-coloured and -shaped balloons covering my bed as well as two chocolate muffins, on a plate, hidden amid a jungle of flaming candles (more than 22, I might add). I was sung to and even joined in myself! Although being away from everyone I love at home, I was so happy because in front of me were cards and a small gift from them all. I took my time opening and reading each one because I wanted to savour the moment and make it last. I have never felt so content. Afterwards, almost perfectly timed, the phone rang and it was Mum - I spoke to her and Han and Dad for nearly two hours which, if possible, added to my happiness even moreso.

After a dippy egg and a very relaxing morning of weekend tv in bed, I prepared the evening meal - spaghetti bolognaise. I haven't been able to eat this for over two months now so, as you can imagine, I was extremely excited and very particular about the preparation and consumption.

Post-cinema visit, I returned extremely hungry so cooked the spaghetti and garlic bread eager to serve. As I sat down and took my first bite I was in heaven; the taste was absolutely divine. Two months of beans, raviolli from a can and pot noodles had finally come to an end and although my bowels were in for a shock; vegetables, a rich tomato sauce and garlic, I didn't care. It really was beyond AMAZING and definitely the number one highlight of the North Island.

Thank-you all for your birthday wishes. Even though I had a wonderful day, it would have been so much better to have celebrated with you. Missing you all very much. Lots of love xxx
