This is a "vacherin" "a la Toulouse".
Charlestonians, you can get a vacherin "a la Charleston", at 39 Rue de Jean. It's basically a meringue, then custard, then fruit, then chantilly (whipped cream) & syrup (usually strawberry or raspberry). Absolutely delicious.
