A strong part of Yo Sushi’s selling point, in my opinion, is the ease and simplicity with which it dispenses rather exotic products to people without testing their knowledge of that product. Further, the presentation makes it so that cost is clear, via colour coded dishes, and the smaller proportions allow for a degree on inexpensive experimentation. That same process also removes all potential embarrassment anyone could possibly feel for not knowing what things are – they simply use the visual approach to select a favoured product, which they do not have to discuss with the staff if they don’t want to. Finally, there is total transparency to the preparation process and the obviously clinical environment, which reassures people concerning food safety and hygiene. Interestingly Jeremy, my lunch companion, went off-piste and asked for Beef Teriyaki without garlic, which did not faze them and they accommodated the request without a problem. Of further interest, our waitress seemed to struggle with English and after I failed to convey my desire for the bill in our native language, I instinctively tried it in Spanish “La quenta, por favor”, which worked a treat.
