This is one of last years pig's legs and represents our fist crack at Parma ham subsp hiberniae. It was salted in December and has been drying in the kitchen ever since. Despite advises from HF Whitingstall, it was with some trepidation that I cut through the mould and rather slimiferous fat on the outside. The result is very pleasing; P says it is more like jamon iberico than Parma. I'd settle for that but I know we have an expert in our group on this subject. Ham sandwiches anyone? We have some junior guests coming next week and burgers are on the menu. These are gourmet brioche style burger buns which came from the New York Times via Smittenkitchen.com. I do believe the days of cookbooks are numbered.

GG Changing the subject away from the ham. I have come to the conclusion that the bun is the most importand single ingredient of a good burger. Bad bun = bad burger.
TG I think you are onto something Mediocre beefburger + good bun=good overall experience
GG Further to reinforce TG's point. If the burger is poor you can always put toppings on it to improve the taste but there is nothing you can do with a bad bun.
MM I hadn't thought of the bun as so critical, but it remains to be seen if they pass the Joshua and Jacob test. I couldn't bear to serve up the sugary foam from plastic bag with decent burger combined with some of P's cucumber relish. Quality Assurance reports next week.
TG We all tolerate poor bread at times,but good bread is a joy! One of my Birmingham clients,Mary (90)always makes me a sandwich,the bread is home made,as is the chutney,a good spread of butter and FULLY matured cheddar cheese,it is utterly delicious and Mary's bread makes it Cucumber relish,when I read those words there is massive salivation
JJ GG is quite right in that some elements of a burger can have more influence on the overall taste experience more than others, especially the bread/bun. I honestly think McDonalds buns with their fluffy nothingness take the biscuit for crapness, but going back to an old theme, the relish is CRITICAL and, along with British rowing and cycling, the real elite is...(see next page)
