Hi Everyone To make my Almond shortbread you will need the following equipment.
Equipment
- mixing bowl
- measuring cups, spoons
- wooden spoon
- eleteric mixer
- nonstick spray
- baking papaer
- baking tray
- knife
- chopping board
Ingredients
- 250g butter softend
- 2 1/2 cups icing sugar
- 2 teaspoons vanilla extract
- 1 orange, finely grated
- 1 egg, room temperature
- 2 1/2 cups plain flour
- 1 teaspoon baking powder
- 1/2 cup chopped almonds
Method
1. Beat butter, icing sugar and mix organge rind and vanilla extract untill pale and creamy. add egg and beat well untill combined. sift flour and baking powder over mixture. add chopped almonds and stir untill dough comes together.
2. use one tablespoon of mixture for each biscuit and form into a crescent moon shape, place on trays and bake for 15 minutes.
Note- These biscuits are meant to rest for 5 minutes because they come out of the oven soft and they need to be kept 5 minutes out of the oven to harden. its important that the biscuits harden because they need to be hard for when you coat them in icing sugar so they dont crumble.
The greek term for these biscuits is called Kourabiethes, and in english thier known as almond shortbread. These biscuits are tradionally covered in alot of white icing sugar and are around Christmas time .
My yaya, tought me how to make these and each christmas holiday, we always get so many of our friends making the same biscuit, and we all just compare them and find ways to improve on the recipe.
Theses biscuits are a festive joy to bake. They dont require to many ingredients and have stimple steps to follow. try somthing diffrent this christmas, bake these! cause youre christmas is goning to get a whole lot better!!
