The fishing boat we were using caught live fish and stored them in large cooled tanks with Oxygen pumped through to keep them calm. Eventually the Coral Trout ended up on the tables of Hong Kong and Chinese resturants. It was hard work for these fisherman who earned their keep as these babies were all caught on lines. Worth more than $100/kg eventually they're well looked after duing their journey
