I have a confession to make, since being in Ireland, we have indulged in Italian food every evening. And I am proud to report that each meal has been absolutely scintillating! It is kind of silly; but honestly it is the best food that we have ever had. Going into the trip we were all terrified about how the food would taste; with the blood sausage, black and white pudding, bangers and mash, shepherd's pie and the other gruesome authentic Irish food. The trick, we realized was to avoid Irish food at all cost and stick strictly to Irish beer, and in our case, eat only pizza and pasta. It has worked wonders; maybe not for our waistlines; but for our peace of mind and tastebuds. On a sadder note; we are leaving Ireland tonight, leaving this Emerald Isle, which we have grown so much to adore and cherish as our "home away from home." In the past few days we have really gotten around. We hit up Galway, Dingle and most recently Kilkenny. We have seen The Cliffs of Mohr, The Dingle Peninsula, Rock of Cashel and the lovely shops of Kilkenny. It is truly beautiful here. There is more lucious green landscape here that I can possibly think of an analagy to compare it to. We realize why this land is green first hand. It rains alot. Everyday for hours--but with all this reain, whenever we do get a glimpse of sunshine or a sliver of blue sky, we have more appreciation than the day we were born. I love Ireland, and deep down, I think Ireland loves me back. Next stop; London, baby.
